  Соус тартар - классический соус французской кухни, основными компонентами которого выступают яичный желток, сваренный вкрутую, растительное масло и зеленый лук. Яичные желтки смешиваются с уксусом или лимонным соком, солью, перцем. В полученную смесь добавляют растительное масло и взбивают ее до состояния эмульсии. Полученную массу «облагораживают» добавлением некоторых других ингредиентов по вкусу: обычно это зеленый лук, соленые огурцы, петрушка, чеснок. Соус тартар с солеными огурцами имеет свой неповторимый вкус и шарм.
